Tamees is popular in Madinah. It is often eaten with beans. It is usually served as breakfast, and is often served besides other dishes at dinner. This type of bread was brought to Madinah by Afghan and Bukhari immigrants.
There is no historical record documenting the exact date of introducing it to Madinah.
Popularity of Tamees
It is a popular food in the full sense of the word because it is at once useful, delicious and cheap. It is made in all cities of Hijaz, and is a valuable food because it is rich in carbohydrates and fibers. It has a lower rate of calories than other traditional types of bread.
There are many varieties of this bread, the most important of which are: normal tamees, tamees biscuits, tamees with ghee, tamees with cheese, tamees with leek and wheat tamees.
How is Tamees Made?
Tamees is made from white flour, which is kneaded into a thick dough. It is then flattened. After that, holes are poked in the dough using a special metal comb-like tool, and black seeds and sesame are sprinkled over the dough. Finally, it is baked in an oven.
